Crunchy Salmon Fillets

Ingredients
:
2 6-8oz salmon fillets, skin removed, thawed
2 large red peppers, roasted organic
1 apple, organic, sliced thin wedges
1 c organic corn flakes, crushed,
spiced virgin olive oil
dijon mustard
salt to taste

Equipment: 10 inch cast iron skillet

Pre-heat oven to 350 degrees F

Directions:

  1. Pour in small amount of olive oil in iron skillet and warm.
  2. Add apples and red peppers and sauté lightly.
  3. Drizzle olive oil on one side of fillet. Spread on even coating of Dijon mustard.
  4. Pour about ½ cup of spiced flakes in shallow dish, then coat the same side with corn flakes.
  5. Repeat coating on other side of fillet.
  6. Lay fillets on top of apples and red peppers in cast iron skillet.
  7. Put skillet in pre-heated oven. Bake in oven 10 minutes.
  8. Remove from oven and turn oven to broil.
  9. Return fillets to oven and broil to brown corn flake coating, approx. 2-3 minutes. DO NOT OVERCOOK!!!!!!!!!!!!!

Spicey Corn Flakes

This is a corn flake mixture to be used as a coating for fish

Ingredients:
1 box of corn flakes, organic
oregano, dried
thyme, thyme
sweet basil, dried
marjoram, dried
ginger, ground
pepper, fresh ground
dill, dried
kosher salt

The amounts of each spice/herb is according to each individual’s taste.

For the size of the mixture amount being the full box, spice measures may start at tablespoon amounts.

Equipment:
Rolling pin or food processor
Parchment paper

Directions:

  1. If using a food processor, pour entire box of corn flakes into processor.
  2. Then add all the spices/herbs and pulse until corn flakes are at consistency of coarse to fine bread crumbs. If using rolling pin, place wax paper on counter pour on flakes and place wax or parchment paper over, and roll out to fine crumb consistency, add spices.
  3. Pour mixture back in corn flakes box to use for other recipes.
